Olive Oil Beef Stir-Fry
Ingredients:
1 lb beef sirloin, thinly sliced
3 tbsp EDDA olive oil
2 cups mixed vegetables (broccoli, bell peppers, snap peas, carrots, etc.)
2 tbsp low-sodium soy sauce
1 tbsp honey or maple syrup
1 tsp ginger, grated
2 cloves garlic, minced
1 tsp cornstarch (optional, for thickening)
Instructions:
In a bowl, whisk together soy sauce, honey, ginger, garlic, and cornstarch (if using). Set aside.
Heat EDDA olive oil in a wok or skillet over high heat.
Add sliced beef and stir-fry until browned. Remove from skillet.
In the same skillet, add more olive oil if needed, then stir-fry vegetables until crisp-tender.
Return beef to the skillet, pour the sauce over the stir-fry, and toss to combine. Cook for an additional minute or until heated through.
