Mediterranean Eggplant Stew Recipe

Mediterranean eggplant stew is a delicious dish from the Mediterranean cuisine. This dish contains many healthy ingredients such as olive oil, eggplant, onion, garlic, tomatoes, peppers, parsley, and spices. Additionally, it offers gluten-free and vegan options.

Ingredients:

  • 4 medium-sized eggplants
  • 1 large onion
  • 3 cloves of garlic
  • 2 medium-sized tomatoes
  • 2 green peppers
  • 1/2 cup of olive oil
  • 1/4 bunch of parsley
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of granulated sugar
  • Juice of 1/2 lemon

Instructions:

  1. Wash the eggplants and slice them into 1 cm thick pieces. Soak the slices in salty water for 30 minutes. This process removes the bitterness of the eggplants.
  2. Chop the onion finely and crush the garlic cloves. Dice the tomatoes and peppers. Finely chop the parsley.
  3. Take a pot and add the olive oil. Sauté the onions until they become tender. Add the garlic and sauté for 1 more minute.
  4. Take the eggplant slices out of the water and dry them. Add the eggplants to the pot and sauté for 5 minutes.
  5. Add the tomatoes and peppers to the pot and cook for 5 more minutes.
  6. Add the salt, black pepper, sugar, and lemon juice. Close the lid of the pot and cook for 20 minutes.
  7. Add the parsley and stir before taking it off the heat.
  8. Mediterranean eggplant stew is served cold.
